An indigenous variety among the oldest in western Sicily, Perricone offers a wide range of olfactory sensations of fresh red berry fruits, confirmed by a pleasant persistence. Fermentation takes place at a controlled temperature between 22 and 25°C, and the aging process occurs in stainless steel tanks for a period of no less than 6 months. An additional month of bottle aging is carried out before release to the market.

The grapes are harvested during the second half of September.
Intense ruby red wine, with delightful aromas of small red fruits, sour cherry, and plum, complemented by subtle hints of licorice. On the palate, it is enveloping, elegant, and persistent, with a soft tannic note perfectly balanced with its structure. Ideal when paired with legume soups, pasta dishes, risottos, and fava bean purée. Serving temperature: 16-18°C.
